Vegetable Lasagna

Preparation Time 45 minutes
• Lasagna  Noodles
• 1 cup grated Carrots
• 1 cup sliced mushroom
• 1 cup spinach
• 1 cup grated capsicum
• 1/2 cup gouda cheese
• 1/2 cup cottage cheese
• 1 cup sliced tomatoes
• 1 cup onion rings
• 100 grams mozzarella cheese
• ¼ cup soymilk
• Tomato sauce
• 2 tbs lemon juice
• 1 tbs ginger garlic paste
• 2 tbs vegetable/olive oil
• ½ tbs Parsley flakes
• ½ tbs Oregano
• Salt
• Freshly Grounded pepper

1. Cook lasagna noodles as per the instructions on the pack. Drain out water from noodles and keep aside to dry on a clean towel/cloth to dry up.
2. Cook all the vegetables (onion, capsicum, mushrooms, spinach, tomato, cheese etc.) in a pan with 2 tbs oil. Add ginger garlic paste, lemon juice, soymilk, oregano and parsley into the mixture.
3. In a baking pan, and spread tomato sauce nicely. Place a layer of lasagna noodles and cover the sauce completely. Now add the prepared vegetable mixture to the layer and spread it evenly. Place another layer of lasagna noodles and repeat the process. On the top layer grate mozzarella cheese.
4. In a preheated oven (350 degrees) place the pan and cook for about half an hour.
5. Cut it into small pieces and serve.

• You can use Tofu, Zucchini or any other vegetable.
• You can use Parmesan or alfredo sauce or any other sauce of your choice.
